No ordinary fudge

 

We turned the whole recipe around and re-imagined what fudge or a chocolate bar could be: a fusion between chocolate and fudge.

Think of a fudge recipe: instead of regular dairy butter we used a single estate cacao butter and caramelised whole milk. Regular sugar was replaced by unique traditional Dutch Basterd sugar. Finally, the chocolate fudge was topped of by a pinch of Dutch sea salt from the crystal clear waters of the Oosterschelde estuarium, famous for its rich under water fauna.
The result is a bar that behaves a bit like sticky salted caramel fudge and in the mouth it melts like chocolate.

This is no ordinary fudge, we call it “Dutch fudge”, the Heinde & Verre way.

ABOUT THE INGREDIENTS

CACAO BUTTER FROM HACIENDA VICTORIA

Thanks to the reforestation the gentle savanna hills – rolling from the Andes Mountains towards the Ecuadorian coast – can now also harbour cacao plantations again.

Hacienda Victoria is named after the wife of the founder, Carlos Eduardo García Fuentes, who bought the estate back in 2009. Some of the best professionals in the agricultural sciences were involved to undertake the study of soils. Agreements were established with the National Institute of Agricultural Research (INIAP) in order to guarantee the delivery of Arriba certified seeds. Hacienda Victoria traditionally grows pure Arriba cacao, which is the ancient cacao variety of Ecuador. The farm works in a sustainable (carbon neutral) and socially responsible way certified by the Rainforest Alliance.

TRADITIONAL DUTCH BASTERD SUGAR

For this bar we used a typical Dutch sugar called “basterdsuiker” which is officially recognised as local specialty by the European Union. Basterdsuiker is a mix of fine granulated crystal sugar, invert sugar and caramelised sugar syrup, all made from locally grown sugar beet in the Netherlands. This type of sugar has been made in The Netherlands since the beginning of the 17th century and is often used in iconic Dutch pastries.

DUTCH OOSTERSCHELDE SEA SALT

Inspired by the French au beurre salé, a pinch of sea salt was dissolved to add that little bit of extra oomph.

For this we sourced salt from the Dutch saltworks Zeeuwsche Zoute. The saltworks originate from the fishing village of Bruinisse on Schouwen-Duiveland in the province of Zeeland. The location is situated next to the largest national park in the Netherlands, the Oosterschelde which is one of the best places for water extraction. The nearby sandbanks, oyster and mussel beds purify the water, ensuring that they can pump the clearest and cleanest water from the Oosterschelde at high tide.

As early as Roman times, salt was extracted from the sea in Zeeland. In the Middle Ages, this grew into a craft. Saltworks Zeeuwsche Zoute has revived this old tradition after several years of research.

Our goal is natural flavour excitement in every bar. What makes Heinde & Verre chocolate special:

  • No alkalizing agents or other chemicals used. Result is a higher level of anti-oxidants remaining in the chocolate compared to standard industry chocolate

Each Heinde & Verre box contains 2 bars, one bar for now, one for later. At Heinde & Verre we take chocolate and your enjoyment very serious. Quality chocolate needs to be protected so we have developed the perfect packaging to preserve all the natural flavours. A kraft pouch protects against light, humidity, dust and dirt. A double air tight seal protects against odours. We have extracted part of the air to reduce oxidisation and moisture.
