This bar was on our “make-wish-list” for a very long time. We crafted a Hollandse Hazelnoot & Basterd dark chocolate bar. You could consider it a Dutch version of Gianduja. It contains a higher percentage cacao and hazelnuts than the traditional Italian recipes.

What makes this bar special?

Even many Dutch are not aware that the hazelnut is endemic to The Netherlands. There are only 3 small farms and we have selected ’t Joostenhuus farm. We used two varieties for complex and prolonged hazelnut flavour. Dutch hazelnuts have a profound flavour that reminds us of chestnut and a smell of cherry wood. They are genuinely somewhat sweeter than Piemontese nocciole.

We added a typical Dutch sugar called “basterdsuiker” and is officially recognised as local specialty by the European Union. Basterdsuiker is a mix of fine granulated crystal Dutch beet sugar, invert sugar and caramelised sugar syrup. This sugar is often used in classic Dutch pastries.

The cacao comes from the KSS cooperative on Bali, organic certified, grown in agroforestry. Thanks to the sophisticated way of working of KSS, all bags of cacao are traceable up to the production date and farms. Thereof, we were able to select lovely floral cacaobeans from small group of farmers within the cooperative.

EXCEPTIONAL CRAFT

A variety of in-house developed techniques is used to craft the unique Heinde & Verre chocolate. The cacao beans of one single farmer are handselected and roasted in multiple ways to bring out as many flavours as possible.
